Why Eat Beets?
Red beets are one of those foods that get strong opinions: it's love or hate. However, what cannot be denied is that they are an extremely nutrient dense food that can help prevent heart disease and a variety of cancer forms. Most of all they are rich in B vitamins, but they also contain potassium, magnesium and the greens contain beta-carotene, iron and calcium. However, since they are also high in fiber they can help prevent constipation.
The most healthy way to cook red beets is steaming them. You can eat the green tops as well. To prepare them, wash the whole beet and greens well and then peel the beets and cut into ¼ inch slices and cook in a steamer for 10 minutes, now place the beet greens on top and cover the steamer with a lid again. Cook another 5 minutes or until tender. Beets are delicious served slightly warm with olive oil, lemon juice and toasted sesame seeds. They also pair well with quinoa and avocado slices.
