Eat Your Vegetables: Grilled Eggplant Salad
If you are looking for new ways to enjoy delicious fresh Spring and Summer vegetables consider grilling. You don't even have to dig out the charcoal and fire up the grill, you can do it all with your oven or a heavy rigid grill pan. With a grill pan you'll need to heat the pan thoroughly over high heat and then, without adding any oil, place your strips of vegetables cut lengthwise and cook them until they have a nice dark coating on each side.
Once done, thickly slice the vegetables and add two smashed (but not minced) garlic cloves that add a rich aroma, salt and fresh olive oil. In this recipe the central ingredients are eggplant and zucchini. A nice aspect of this salad is that the grilled vegetables only remain lightly coated in olive oil without soaking up as much of it as they normally would if they were cooked in it. It makes a delicious summer salad that can be enjoyed with grilled sausages or fresh cheeses and bread.
